Celebrate Turkey Lovers Month With These Easy and Healthy Recipes

The good news is that this is one food you do not need to feel guilty about eating, since it is a low calorie food that is packed in protein. Turkey, Dill, and Orzo Soup
Ingredients:
- 6 cups low-sodium chicken broth
- 4 small carrots, sliced ¼ inch thick
- ½ cup orzo
- 1 ½ cups shredded roasted turkey
- 2 tbsp. chopped fresh dill
Directions:
- Using a large saucepan, bring the chicken broth to a boil. Add the orzo and carrots, simmering for 12-15 minutes or until tender.
- Add dill and turkey and simmer for about 2 minutes or until heated thoroughly.
Turkey and Barley Salad
Ingredients:
- ¾ cup quick-cooking barley
- 3 tbsp. olive oil
- 2 tbsp. fresh lemon juice
- Kosher salt and black pepper
- 4 cups baby arugula
- 2 cups shredded roasted turkey
- ½ cup dried cranberries
Directions:
- Prepare barley according to the package instructions. Drain and rinse under cold water to cool.
- While the barley is cooking, whisk together the lemon juice, olive oil, ½ tsp salt, and ¼ tsp pepper in a small bowl.
- Mix together the barley, arugula, turkey, and cranberries in a large bowl. Drizzle with vinaigrette and toss until well combined.
Turkey Reubens
Ingredients:
- 8 slices rye bread
- 2 tbsp. Dijon mustard
- 2 tbsp. Russian dressing
- 8 slices roasted turkey
- 1 cup sauerkraut
- 8 slices Swiss cheese
- 1 tbsp. olive oil
- 3 cups potato chips
- ½ cup sliced pickles
Directions:
- Spread mustard over 4 slices of bread and spread Russian dressing over the other 4 slices.
- Add the turkey, sauerkraut, and Swiss cheese on the mustard bread slices and top with the Russian dressing slices.
- Heat olive oil in a large skillet over medium heat.
- Add the sandwiches, pressing occasionally with the back of the spatula until the bread is golden brown and the cheese is melted, about 3-4 minutes per side. Serve with potato chips and pickles.
