For elderly loved ones who live alone in their own home, sometimes the day comes when they just need more help than family members are able to provide. This is a quick and easy type of sandwich to make and doesn’t heat up the house as much as turning on the stove or oven. If you don’t have a Panini maker you can use a waffle iron with the flat plates or a sandwich maker with Panini plates inserted. Otherwise, you can make a Panini in an electric frying pan and flip over when one side is cooked. It’s not exactly the same as a Panini but it’s a close alternative.
Ham and pear panini
- 4 slices bread
- 1 tbsp mustard
- 6 slices ham
- 1 pear, peeled and sliced thinly
- 2 dashes ground black pepper
- 1 cup shredded mozzarella cheese
- 1 tbsp butter
- Spread 2 slices of bread with the mustard. Layer each with 3 slices of ham, half of the pear slices, dash of pepper and ½ cup mozzarella cheese. Top with remaining bread. Lightly spread butter on outer sides of each sandwich
- Heat a skillet or griddle over medium heat. Grill sandwiches until cheese is melted and bread is golden brown, about 3 minutes per side. Cut each sandwich in half to serve.
Turkey Avocado Panini
- ½ ripe avocado
- ¼ cup mayonnaise
- 2 ciabatta rolls
- 1 tbsp olive oil, divided
- 2 slices provolone cheese
- 1 cup whole fresh spinach leaves, divided
- ¼ pound thinly sliced mesquite smoked turkey breast
- 2 roasted red peppers, sliced into strips
- Mash avocado and mayonnaise together in a bowl
- Preheat sandwich press
- Split rolls in half the flat way and brush the bottom of each with olive oil. Place bottoms of rolls onto the panini maker, olive side down. Place a cheese slice on, half the spinach leaves, half the turkey breast, a slice of roasted red pepper. Spread half the avocado mixture on the cut surface of the top bun and place down on top of the sandwich brush the top with olive oil.
- Close the sandwich press and cook til bun is toasted and crisp and cheese is melted, about 5 to 8 minutes. Repeat with the other sandwich.
